Stuffy Spicy Chicken Pilaf

Today I'm hosting a small luncheon with my mum and sister, at my place. I decided to make a spicy chicken pilaf which inspired by Chef Michael Smith tv show on Asian Food Channel.


To those who maybe wondering what is Pilaf? Oh, simply as.. Pilaf is flavored rice. That's it. So my pilaf has a little combination of Mediterranean, Italian and Thailand twist. I love my food to be packed with spices and flavorful.

Here is the recipe for you to try, serves 2-3 pax. 

For the Chicken (reduce the ingredients for less spicy) 
Ingredients: 
1/2 chicken/ 2 chicken legs
2 tbsp ground blackpepper
2 tbsp honey
2 tbsp oyster sauce
2 tbsp cayenne pepper
Salt and pepper to taste

Method: 
1. Mix all ingredients together and marinate the chicken for 10-15 minutes and then roast in the oven for 20 minutes, 250 degrees Celcius. 

For the Pilaf
Ingredients: 
1 cup of rice, rinsed and drained
2 cups of chicken stock
2 tbsp olive oil
1 small onion, sliced
3 garlic cloves, sliced
1 cinnamon stick
1 inch piece fresh ginger root, grated
1 lemongrass, sliced
1 tsp turmeric powder
1 tsp curry powder
1 small tomato
10-15 diced pineapple
5-6 mushroom, cut into 2
Salt and pepper to taste

Method: 
1. Heat the oil in a pan, stir in onion, garlic, ginger, and lemongrass until soft. Add the cinnamon stick and cook until golden, then stir in the tumeric powder and curry powder. Season with salt and pepper. 

2. In the same pan, pour in the rice, chicken stock, tomato, pineapple and mushroom. Stir again. 

3. Replace the pan with ricecooker pot or baking pan. Cook the rice in ricecooker or bake in the oven for 25-30 minutes, 250-270 degrees Celcius.

4. Serve with the chicken, garnish with coriander and cashew nuts.
